Quick Meal Week

This week has been crazy around here. Bradley has been working late a lot and making a meal with Grace constantly trying to climb up my legs isn't easy. That means this week we ate a lot of quick meals with very little prep involved.


We started the week off with a 5 Minute Spicy Asian Chicken Salad.  My husband loved this salad, but it sure was spicy. I normally love spicy food, but this was a little much. Next time I will make sure to omit the jalapeƱo and cut back on the Sriracha. 

We ate a lot of salads this week because they are so quick to throw together. This Sriracha Lime Chicken Chopped Salad was so yummy! Since it is freezing cold here I didn't want to use the grill so I just threw the pineapple on a grill plate in the oven and used leftover rotisserie chicken from the night before. 

By the middle of the week I was craving breakfast foods and these Pumpkin Cinnamon Streusel Pancakes did the trick! I could eat these everyday, if it wasn't for the calories. 

Since I was in a baking mood that night I also made some Raspberry Sticky Buns for Bradley's breakfasts the next couple mornings.


Since we do not get home from Grace's swimming lessons until 6:30, I threw a pot roast in the crockpot in the morning and we ate Italian Beef Sandwiches that night.
